Not all smoked black peppercorns are produced to the same quality, just like smoked salts. Most companies won't even mess with smoked peppercorn because its is difficult to get the peppercorns to absorb and take on that smokey taste. However, we enjoy a challenge and eventually mastered the process. After a little prep work on the peppercorns themselves, we slowly cold smoke our peppercorn's in our specifically built smoke houses for 3-5 days minimum in small batches to allow the pepper's to catch and absorb that magnificant smokey goodness, producing some of the finest tasting smoked black peppercorn's money can buy. When done right, smoked pepper delivers an incredibly fresh BBQ taste that works incredibly well with our smoked bourbon sea salt. This most definately takes salt and pepper to the next level.
